Tomato Chutney



Ingredeints :

  1. Tomato - 6 Nos
  2. Onion shallots- 10
  3. Ginger pieces- 1 tbsp
  4. Crushed chilly- 1/2 tsp
  5. Mustard seeds- 1/4 tsp
  6. Oil - 2 tbsp
  7. Green Chilly- 2 Nos
  8. Salt as required

How To Cook:

  1. Add oil to the pan , when it is hot  add mustard seeds and let it splutter.
  2. Add curry leaves and onion shallots , saute for 2 minutes
  3. Add ginger pieces and saute till the raw smell goes off.
  4. Add crushed chilly and saute for a minute.
  5. Add the tomato pieces , green chilly , salt and curry leaves.
  6. Saute till the tomatoes becomes mushy.
  7. Close the pan and cook for 3 minutes.



Red Chilly Chammandi.




Ingredients. 
  1. Onion Shallots-  10 No
  2. Red Chilly Powder- 1 tbsp or as required
  3. Curry Leaves- 15 No
  4. Tarmarind - one small gooseberry sized.
  5. Coconut - 1 cup
How to Prepare
  1. Grind the above mixture in a mixie.



Note : Make sure not to add water.

Fried Onion Chammandi




Ingredients. 
  1. Onion (big sized) -  2 No
  2. Red Chilly - 5 No
  3. Curry Leaves-20 No
  4. Tarmarind - one small gooseberry sized
  5. Salt As required.
  6. Oil - 3 tbsp
How to Prepare

  1. Put 2 tbsp oil and fry the onions till it start turning brown.
  2. Add curry leaves and fry for 2 minutes.Set the mixture aside.
  3. Add 1 tbsp oil and fry the red chilly . Approximately 2 minutes.(Refer piture 1)
  4. Mix the onion mixture , redchilly, tarmarind with required salt in a mixie.



Note : Make sure not to add water.

Pudina Chutney






Ingredients 
  1. Coriander Leaves -  4 bunches
  2. Mint Leaves-2 bunches
  3. Green Chilly- 3 No
  4. Water- as required to make a paste form  ( 1 to 1 1/4 cup approx)
  5. Salt
  6. Lemon- 1 full squeezed
How to Prepare 
  1. Wash the mint and coriander leaves well. Soak in water and keep aside for half an hour.
  2. Mince the coriander leaves as thin as possible.
  3. Sort out the mint leaves and mince it as thin as possible.
  4. Put the leaves, salt, green chilly ,water in a blender and grind it to form a paste like consistency.
  5. Pour the squeezed out lemon and mix well.
  6. Check salt and add required salt.
  7. Place the chutney in fridge for 1 hour.
  8. Serve it with bread or rotis.

Mango Chammandi





Ingredients.
  1. Raw Mango cubes - 1/2 Cup
  2. Grated coconut- 1/2 Cup
  3. Shallots - 5 No
  4. Green Chilly- 1 big
  5. Curry Leaves-few
  6. Salt As required.
How to Prepare
  1. Grind the above mixtures  in  a mixie just twice.
  2. Serve hot with rice.
