Indian Style Home Made KFC


Home made KFC is easy if you have the right ingredients .I used skinless chicken .But it is always good to use the skinned chicken.This idea of making KFC was decided instantly and didnot get time to think for buying skinned chicken :-)

I got this recipe from my husband.He made this for me today :-)



Ingredients :
  1. Chicken Legs - 4 No   ( preferably use skinned chicken )  
  2. Onion rings for garnishing
  3. Egg- 1 No
  4. Milk - 2 tbsp
  5. Maida / All puprpose flour- 1 Cup/ as required
  6. Salt 
  7. Pepper Powder- 1 tsp
  8. Chilly Powder- 1 tsp
  9. Garlic paste- 1 tbsp ( preferably garlic powder - 1 tbsp )
  10. Ginger paste- 1 tsp ( preferable ginger powder - 1 tsp)
  11. Onion Powder - 1 tsp ( optional if you  dont get  it but it adds taste )
  12. Oregano - 1/4 tsp
  13. Oats / Bread crumbs - as requried.( optional )
Ingredients for First Marination  : 
  1. Turmeric Powder- 1/2 tsp
  2. Curd- 2 tbsp
  3. Lemon drops 
  4. Pepper powder - 1/4 tsp
  5. Chilly powder- 1 tsp
How to Cook

It is not necessary to use onion powder , but definitely it adds taste  to your KFC.
Generally we use skinned chicken. IF you are using the skinned chicken you need not roll the marinated chicken in oats or bread crumbs.
But since i used skinless chicken , to give it that  KFC look , i rolled the marinated chicken in oats. You can instead use breadcrumbs as per your choice.
But the taste of this  KFC  is yummy . 
Now to the exact recipe!!
  1. Initially marinate the chicken with the ingredients for first marination .Keep this aside for 1 to 2 hours.
  2. Now mix the ingredients from ( 5 to 12 ) in a bowl and keep this aside.
  3. Beat the egg and mix it with milk . Whisk it well . Keep this aside.
  4. Transfer the oats / breadcrumbs in a plate and keep this aside.
  5. Now take each of the marinated chicken legs and dip in the egg milk batter first.
  6. Secondly roll it over the maida powder prepared . 
  7. Third again roll it in egg milk batter 
  8. Fourth , roll in the oats.
  9. Last again roll it in the maida powder.
  10. Deep fry the chikcen for 10 minutes in low flame.Make sure you stir in between.
  11. When ti turn golden colour , you crispy yummy KFC is ready !!
  12. Have it hot with sauce !!!


Unnakaya


Unnakaya is a malabari dish  made with ripe banana.

INGREDIENTS :
  1. Kerala Ripe banana  / Nendrapzham ( if very ripe banana is 100 % ripe ,  take bananas of  70 to 80% ripe) - 2 Nos
  2. Grated Coconut - 1/2 Cup
  3. Cashew Nuts  and Raisins- 1/2 Cup
  4. Ghee- 2 tbsp
  5. Sugar- 4 tbsp
  6. Cardamon powdered- 1/2 tsp
  7. Oil for shallow frying.
How To Cook :
FOR THE FILLING

  1. Crush the cashewnuts, raisins just for one round in a mixie. 
  2. Heat pan add 2 tbsp ghee to the pan .
  3. When it is hot , transfer the grated coconut , cashewnuts , raisin , sugar and cardamon powder, saute in low flame for 3 minutes and fry on high flame for a minute. Keep this aside for the filling.
  4. Cut the banana into 3 halves.
  5. Steam the banana in a steamer for 10 minutes until it is soft. Make sure you donot overcook the bananas.
  6. Now when it is still warm , remove the outer skin of the bananas.
  7. Cut into half and remove the black seeds.
  8. Now still warm , mash it well with a spoon  and later when it start to cool down , mash well with your hand to a dough form.( You need not add  any water as we have taken ripe bananas)
  9. Now make small balls out of the bananas like we do for chappathi and flatten it on your palm to a small circular shape.
  10. Add the filling onto the middle of the circle and close it and slightly elongate by keeping between both your palms to get an oval shape.
  11. Heat oil in a pan and shallow  fry the banana balls .
  12. Keep on moving the banana balls until  all the sides start to turn golden brown.
  13. Serve hot !!!




Wheat Samosa

Ingredients :
  1. Potatoes- 2  No
  2. Frozen Green Peas- 1/2 Cup
  3. Coriander Leaves Chopped- 1 tbsp
  4. Turmeric Powder-1/4 tsp
  5. Chilly Powder -1/4 tsp
  6. Amchur Powder- 1/4 tsp
  7. Cumin Powder- 1/2 tsp
  8. Garam Masala- 1 tsp
  9. Ginger chopped- 1/2 tsp
  10. Green Chilly Chopped- 1 No
  11. Salt as required
  12. Ghee - 1 tsp
  13. Oil for frying.
For the Dough
  1. Wheat Flour - 1 1/2 Cups
  2. Ajwain - 1 tsp
  3. Salt as required
  4. Oil - 1 tbsp
  5. Water as required.
How to Cook :
1. Prepare the dough by mixing the ingredients for the dough.Please make sure add adequate salt .Keep this aside for half an hour.
2. Pressure cook the potatoes to 3 whistles. 
3. Boil the frozen green peas for 1 minute.
4. Drain out the water from green peas.
Mix the green peas , chopped coriander , enough salt and potatoes together . Mash it well using a mixer

5.Add ghee to the pan , fry the cumin powder for 1 minute. 
6.Add the chopped ginger and green chilly , saute for 1 minute.
7.Add the mashed potaotes to this .Add the garam masala , turmeric powder, amchur powder , chilly powder and mix it well. 

8. Now make lemon sized  balls out of the dough.

9. Roll out into a round shape.

10. Make a cutting at exactly the middle of the rolled out dough.Now you get 2 semicircles.

11. Join the 2 edges of the semicircle .Now you get a cone shape.
12. Also press the tip of the cone.Now join the edges of the cone.

13. Now add the filling inside the cone.

14. Fold the open part of the cone. Gently press the sides with water.

15. Add oil to the pan , when it is hot , transfer the folded samosas and fry it till it turn brown in colour.
16.It should turn crisp.
17 .Serve hot with chutneys / tomato sauce.



Punjabi Samosa



Ingredients :
  1. Potatoes- 3 Nos
  2. Frozen Green Peas- 1 Cup
  3. Coriander Leaves Chopped- 3 tbsp
  4. Turmeric Powder-1/4 tsp
  5. Chilly Powder -1/2 tsp
  6. Amchur Powder- 1/2 tsp
  7. Cumin Powder- 1 tsp
  8. Garam Masala- 1 tbsp
  9. Ginger chopped- 1 tsp
  10. Green Chilly Chopped- 1 tsp
  11. Salt as required
  12. Ghee - 1 tsp
  13. Oil for frying.
For the Dough

Bread Bhajji



Ingredients:
  1. Maida ( All purpose Flour) - 2 Glass
  2. Bread - 6 nos cut into triangular or square pieces
  3. Red Chilly powder- 1 tbsp
  4. Turmeric powder- 1/2 tsp
  5. Ginger-garlic paste - 1 tsp
  6. Green Chilly chopped- 2 Nos chopped finely.
  7. Coriander leaves chopped- 2 tbsp
  8. Asafoetida - 1/4 tsp
  9. Oil for frying
  10. Salt required.
How to cook:
  1. Prepare the batter by mixing the maida, ginger, garlic, greenchilly, salt, coriander leaves to get a loose dough.
  2. Heat oil in the pan .
  3. Dip each bread piece and fry for a maximum of 2 minutes .It wll be cooked soon.
  4. Serve hot with tomato sauce.
Note  : We can also use besan powder instead of maida which is a better option



Chakka Ada In Vashna Ela/ elavarnam/ Jack Fruit Ada


 The Leaf  used for preparing traditional Ada is Bay Leaves. Few use Banana Leaves as well.The speciality of the dish is the tempting aroma spread  when you cook this.


Bay Leaves Used for Cooking

Ingredients  
  1. Ela  - as needed
  2. Rice Flour( unboiled)- 2 1/4 cup
  3. Sharkkara (Jaggery )- 1/4 kg
  4. Jack Fruit Jam - 300 gram
  5. Powdered Cardamon - 1 tbsp
  6. Ghee- 1 tbsp
  7. Grated coconut- 2 cups
  8. Salt
How to Cook.
  1. Take the flour into a bowl and add  a pinch of salt ,boiled water enough to make a smooth dough with a spoon first.When the dough cools , still lightly warm , knead the dough thoroughly with hand . 
  2. Boil jaggery with 1/4 cup of water in a pan . After it gets dissolved, filter it to remove the dust particles. Again boil to get a thick syrup. 
  3. Mix  coconut, Jack fruit jam , cardamon powder , jaggery syrup  with the prepared rice dough to get a semi thick  paste.  Make lemon sized balls out of the dough.
  4. On one  piece of leaf , place the rice  dough ball , press  and spread out the dough .  Dipping the hand in water while doing it will make it easier to spread the dough. Refer picture below  A and B

 5.Fold the leaf in the middle and press the leaf so that the filling is spread   evenly.Press all sides as well so that the filling wont come out.Refer Picture C.

 6.Place the banana wraps in steaming vessel and steam for minimum 20 minutes , till it get fully cooked. Refer Picture D.

    7.Take the steamed ada out of the banana leaf and serve hot .

Uzhunnu Vada



                                                
Ingredients
  1.  Urud Dal - 1 cup
  2.  Ginger- 1 big piece
  3.  Curry Leaves- few
  4.  Green Chilly- 2 medium size
  5.  Salt to taste
How to Cook.
  1. Soak Urud Dal for 5 to 6 hours.
  2. After 6 hours  grind the urud Dal to a fine paste  , please make sure to get a creamy paste.
  3. Grind the ginger , curry leaves , green chilly, salt just for one round.
  4. Mix the above grinded ingredients with the Dal paste.
  5. Make oval shaped patties, shallow fry the patties.


Onion Bhaji ( Ulli bhaji)


Onion Bhaji is a spicy Indian snack. It is made in a variety of ways. But i love this recipe which my mom make.  We put coriander leaves with onion which adds taste to the bhaji.



Ingredients
  1. Maida (All purpose flour)  -1 cup
  2. Onion medium sized cut into small pieces -2 No
  3. Coriander leaves chopped -1/2 cup
  4. Ginger-Garlic paste-1 tbsp
  5. Asafoetida Powder- a pinch
  6. Red Chilly Powder-1/2 tsp
  7. Turmeric Powder-1/2 tsp
  8. Salt as required
  9. Oil for deep frying.
How to Cook
  1. Prepare the batter by mixing maida, ginger-garlic paste,turmeric powder, chilly powder,asafoetida powder,salt with required water in order to get a  smooth batter without any lumps.
  2. Add the chopped onion and coriander leaves into the batter and mix well.
  3. Heat the kadai with oil for deep  frying .  Transfer the spoonful of  batter into the oil for deep frying.
  4. Fry until it turn golden brown .
  5. Serve hot with chutneys or tomato sauce.
  6. Drain on kitchen paper .




TIP  : For those who love to have it too spicy , adding 2 to 3 green chilly is an option. If you don't want it too spicy add little chilly powder.
For the flour , we can use the chic pea ( Besan ) flour as well.
Sprinkle lemon over the bhaji adds taste.

Vegetable Cutlet


We both love cutlets. This is so delicious.We have it as sandwich with paav bhaji bun. 
Ingredients
  1. Potatoes Medium Sized Boiled and Mashed-4No
  2. Finely chopped carrots-3 No
  3. Finely chopped beans-3 No
  4. Boiled Green peas- 1 cup
  5. Turmeric Powder- 1 tsp
  6. Chilly Powder- 1 tsp
  7. Amchur Powder- 1/4 tsp
  8. Garam Masala- 1 tsp
  9. Coriander Leaves chopped-2 tbsp
  10. Maida - 1 cup
  11. Bread Crumbs- 150 gm
  12. Salt
  13. Oil for deep Frying
How to Cook 
  1. Prepare the smooth batter with maida, little water, salt.
  2. Cook the potatoes in cooker till it becomes soft.
  3. Steam the beans, carrots , green peas.
  4. Mash the vegetables including the potatoes, beans, carrots and green peas together thoroughly.
  5. Heat oil in pan, mix the vegetables with rest of the masalas  including the turmeric , chilly powder, garam masala ,amchur powder, coriander leaves, salt.
  6. Allow the above mixture to cool.
  7. Make lemon sized balls out of the cooked vegetables, flatten it into oval shape , dip in the  maida batter till it is covered by maida thoroughly  and then again roll it  over the bread crumbs. Pour it directly into oil for deep frying.
  8. Serve hot with Tomato Sauce.
TIP  : You can also use rice flour instead of breadcrumbs. 


Rice Ada


Ela Ada is a traditional kerala dish. Ela in malayalam means leaf and the leaf used in making this Ada is banana leaves. Before using banana leaves to make ada, the banana leaves has to be mildly wilted. This can be done by holding the banana leaf on top of a low flame for a few seconds, Then cut the leaf to small rectangular pieces.



Ingredients
  1. Rice Flour -  2 cups
  2. Aval (Poha ) - 1 1/2 cup 
  3. Jaggery ( sharkkara )-200gm
  4. Coconut Grated-1 1/2 cup
  5. Banana Leaf - as required.
  6. Cardamon - 2 or 3
  7. Water - as required
  8. Salt- a pinch.
How to Cook
  1.  Take the flour into a bowl and add salt ,boiled water enough to make a smooth dough with a spoon first.When the dough cools , still lightly warm , knead the dough thoroughly with hand . Make lemon sized balls  with the dough.
  2. Boil Jaggery with 1/4 cup of water in a pan. After it gets dissolved, filter it to remove the dust particles. Again boil to get a thick syrup.Add coconut , aval,cardamon powder with the thick jaggery syrup to get a thick mixture. We have to use this as fillings for the ada
  3. On a small piece of banana leaf cut in the form of rectangular shape, place the rice  dough ball , press  and spread out the dough .  Dipping the hand in water while doing it will make it easier to spread the dough. Pour the fillings on top of the spread dough.
  4. Fold the leaf in the middle and press the leaf so that the filling is spread evenly.
  5. Press all sides as well so that filling doest move out.Place the banana wraps in steaming vessel for 15 to 20 minutes , till it gets fully cooked.
  6. Take the steamed ada out of the banana leaf and serve hot.




TIP  : As fillings we can use coconut and salt alone as well for those who don't like it sweet.

Ethakka Appam/ Pazham Pori


This is a famous dish from Kerala .Medium ripe banana is generally used for preparing this.  A famous variety of banana called Nenthrapazham,which we get in Kerala is used for preparing this.


Ingredients
  1. Banana- 2 Nos
  2. Maida( All Purpose Flour) -1 cup
  3. Rice Flour - 1 tbsp
  4. Water - as required
  5. Oil for shallow frying
  6. Turmeric powder  1/2 tsp
  7. Salt – a  pinch
How to Cook
  1. Mix Maida with required amount of water ,rice flour , a pinch salt and turmeric powder to make it  a medium thick paste without much water. Make sure not to form lumps while preparing the batter .
  2. Cut the Banana lengthwise into 4 pieces and cut in the middle .
  3. Heat oil in a frying pan.
  4. When the oil is ready , dip the banana in the maida batter prepared  and pour it to the pan and shallow fry until it gets cooked. When one side is cooked turn the banana slice and cook the other side as well.
  5. After it is done, transfer the banana slices to paper napkins to drain off the excess oil. 
  6. This is one of our favourite dishes and you can have it as a snack.
